Tonight I made Coriander and Cumin pork. This was a dish that Emily made for us back in Califonia. Simple, incredible tasty, and easy! It is one of my big mainstays now.

To make:
- Mix 50/50 coriander and cumin together. Add some salt, pepper, and garlic powder to taste.
- Rub all over the pork. (this works for both loins and chops).
- Sear in hot pan on all sides and then cook in oven. This usually means about 3 minutes on all sides and then another 10-20 in an oven for chops and more like 20-20 for a pork loin.
And that is it.
I would suggest as plate additions (as you can see in the picture) Salad, Chunky Apple Sauce, and Rice.
Greenfielding! Tackling something new! Spiking! It is awesome. It is exciting! It is fun! It is new! It is a very ephemeral thing. Over and over again I have started incredible awesome projects! And pounded out the first stages and then ran into one problem. Big or small these problems can dis-rail the forward momentum so quickly! I have tried a bunch of methodologies to make it through these and I am going to continue recording my methods for getting past them.
